Ingredients

  • 1 large egg
  • 1 slice of bread
  • 3 fully-cooked microwaveable bacon slices
  • 1 pat of butter
  • 1/2 tablespoon chopped scallions
  • Salt and pepper

Preparation

Bring a small pot filled with water to a boil over high heat. Carefully add the egg into the pot and cook for 5 minutes. Use a slotted spoon to remove egg from water and run under cold water until the egg is cool enough to handle. 

Meanwhile, toast the bread slice and microwave the bacon slices until warm, according to package directions. Spread the toast with butter and sprinkle with scallions. Cut the bacon slices in half to fit onto the toast. Carefully peel the shell from the egg and cut egg in half. Place the egg halves yolk-side-up on the toast and season with salt and pepper. Serve.
