Chef notes

I had a big container of blueberries that I needed to use up. I've always liked making compotes with different berries and I thought I could make a compote with blueberries, add some vanilla and cinnamon, and use that as a base for oatmeal. When it turned out bright purple, Calvin got very excited, and “purple oatmeal” became a thing!

Ingredients

  • 1 pint blueberries
  • 1 banana, diced or 2 tablespoons brown sugar
  • 1 teaspoon vanilla
  • Cinnamon, to taste
  • 1 cup water, plus more as needed
  • 1 cup 1-minute oatmeal
  • Almond milk, for serving (optional)

Preparation

In a sauté pan set over medium-high heat, add the blueberries, banana or brown sugar, vanilla and cinnamon. Add a splash of water and simmer until blueberries turn a bit syrupy. Add water and bring to a boil. Add oatmeal, lower heat and cook for a minute. Add an optional splash of almond milk to serve.
