Ingredients
- 1 ounce butter
- 1 bunch spinach leaves
- 3 bunch eggs
- 1 tablespoon milk
- 1 ounce irish cheddar, grated.
Preparation
Baking Directions:
Melt the butter in a frying pan over a high heat; when the butter foams, add the spinach leaves, season with salt and pepper and toss for a couple of minutes until wilted.
Meanwhile, whisk the eggs with the milk and salt and pepper.
Then pour over the top of the spinach.
Using a wooden spatula, draw the mixture in from the sides, then scatter the cheese over the top.
Then turn the omelet out onto hot plate and serve.
