Chef notes

These cubes are great to keep in the freezer for when happy hour strikes. Just pop 'em into a glass and top with tequila and club soda. The refreshing effervescence is my favorite part. Plus, it can easily be served as a nonalcoholic margarita without the tequila. It sips like ranch water and melts like a sparkling margarita.

Technique tip: Mix all ingredients in the same bowl with a little water to allow a better freeze.

Swap options: Sub honey for agave if you like it a little sweeter. You can also use a golden Mexican beer instead of club soda.

Ingredients

  • 2 oranges
  • 2 limes
  • 2 lemons
  • 1 cup orange liqueur
  • 2/3 cup agave
  • 1 cup water
  • ounces tequila (optional)
  • 5 ounces club soda
  • lime or orange wheels, to garnish

Preparation

1.

Juice the oranges, limes and lemons into a liquid measuring cup. You should have about 1¼ cups of juice in total.

Stir in the orange liqueur, agave and water. Taste and adjust the agave to your desired level of sweetness.

Pour into two ice cube trays to make 18 cubes. Freeze overnight or until solid.

When ready for a margarita, add 3 to 4 cubes to a tall glass. Add tequila, if using. Top with club soda.

5.

Garnish with a lime or orange wheel.
