I adore the simplicity of this drink. Some of my favorite cocktails are only three ingredients (like a Negroni, for example). In a lot of cases, less is more.
Technique tip: To achieve a thicker consistency, add more honey than water when preparing the honey syrup. This adjustment will help improve the texture as desired.
For the honey syrup:
Place honey and water in a small saucepan over medium-low heat. Cook until honey fully dissolves.
Place in a heatproof jar, bring it to room temperature and seal with a lid before storing.
For the cocktail:1.
Add the bourbon, honey syrup and lemon juice into a shaker with ice and shake.2.
Strain into a chilled rocks glass over one large ice cube.3.
