Chef notes

This cocktail started with a simple question of "what would sound good with matcha?" So I lined up some known matcha flavor buddies including peach, honey, lemon and (hey, why not?) lychee liqueur. It took a good number of times to find the right ratio, but finally that "Eureka" moment happened. The name, Peaches en Regalia, is based on a Frank Zappa song title and translates to "peaches all dressed up." I don't think there could be a more apropos title for this cocktail (yes, I did consider "Match-u Peach-u" for one quick second).

Technique tip: If you plan on making this cocktail in bulk, you can stir the matcha powder, peach liqueur and honey syrup together with a 2:1:1 ratio ahead of time to cut down on labor.

Additionally, using club soda that has been bottled in a smaller glass bottle tends to make the best version of this cocktail. If you become proficient in knowing your club soda amount for this drink, you can skip step four by pouring the club soda directly into your tin after shaking, this will get the ingredients best integrated.

Ingredients

  • 1/2 ounce matcha powder
  • 1/4 ounce honey syrup (3 parts honey to 1 part water, by weight)
  • 1/4 ounce peach liqueur
  • 3/4 ounce lemon juice
  • 1/4 ounce lychee liqueur, preferably Giffard
  • 1/2 ounce peach and orange vodka, preferably Ketel One
  • 1 ounce vodka
  • club soda
  • mint sprigs, to garnish
  • orange slice, to garnish

Preparation

1.

Add matcha powder, honey syrup, peach liqueur and both vodkas into a cocktail shaker with 5 to 7 ice cubes.

2.

Put the lid on the shaker and shake vigorously for approximately 7 seconds.

3.

Remove the lid and strain contents into a highball glass filled with ice.

4.

Top it off with club soda and garnish with a mint bouquet and an orange slice.
