Nothing says, "It's cocktail time!" in the summer quite like an Aperol spritz. Aperol, an Italian aperitif made with rhubarb, isn't just beautiful – it's a great way to elevate a variety of classic drinks. This spritz recipe gets a boozy update with the addition of vodka. 

Ingredients

  • 1 ounce vodka
  • 1 1/2 ounces Aperol
  • 3 - 4 ounces Prosecco
  • Splash of club soda (about 1 ounce per drink)
  • Optional: Splash of fresh grapefruit or orange juice
  • Garnish: Grapefruit or orange peel twist

Preparation

In a cocktail shaker with ice, add Aperol and vodka. Shake vigorously. 

Add a few ice cubs to a large wine glass or rocks cocktail glass. Pour Aperol-vodka mixture into glass.

Top with prosecco and club soda. 

Add a garnish, if desired.
