There's a reason why grilled chicken is a staple on my dinner table. It's easy to make, a crowd-pleaser and leftovers can be turned into a variety of different dishes.

Ingredients

    • 2 boneless, skinless chicken breasts
    • 1/2 teaspoon kosher salt
    • 1/4 teaspoon freshly ground black pepper
    • 1 tablespoon olive oil

Preparation

Preheat a charcoal grill to medium-high, or use a grill pan. Season the chicken with the salt and pepper. Rub the oil evenly over the chicken. Grill the chicken 6 minutes on each side or until cooked through.
