Chef notes
Jell-O shots get an elegant upgrade in this recipe. Juicy citrus and tequila lend the classic flavors of a margarita cocktail, while flecks of gold leaf add a little bit of luxury. They are fun, fancy and playful at the same time.
Ingredients
- 1/2 cup cranberry juice
- 1/2 cup fresh grapefruit juice
- 1/4 cup lime juice
- 1 tablespoon agave nectar
- 3 (1/4-ounce) envelopes unflavored gelatin
- 1 cup (8 ounces) tequila
- 1/2 cup (4 ounces) orange liqueur, such as Grand Marnier
- 2 tablespoons edible gold leaf flecks
Preparation
1.Stir together the cranberry juice, grapefruit juice, lime juice and agave nectar in a medium saucepan. Sprinkle the gelatin over the juices and let stand until softened, about 5 minutes. Place the pan over low, stirring constantly, until the gelatin is dissolved, about 5 minutes. Remove from the heat and stir in the tequila and orange liqueur until combined.
2.Pour the mixture into a 9-inch square pan or silicone pan with individual square molds.
3.Sprinkle the top with the edible gold leaf flecks. Chill until firm about 4 hours or overnight. Cut into small squares or remove the squares from the molds and serve immediately.
