Chef notes

This recipe has a good amount of technique to practice mixology: shaking, straining and muddling.

Technique tips: Muddle fruit and mint with simple syrup to release flavor and aromatics. When your cocktail is done, take your spoon and mix ingredients together to make sure every sip tastes the same.

Swap option: Swap ginger beer for another type of soda.

Ingredients

  • 2 strawberries
  • 2 raspberries
  • 1 blackberry
  • 3 mint leaves
  • 1 lemon peel
  • 1 ounce lemon tea
  • 1 ounce hibiscus tea
  • 3/4 ounce lemon juice
  • 3/4 ounce rich simple syrup (2 parts sugar to 1 part water by weight or volume)
  • ginger beer
  • 1 sprig mint, to garnish
  • powdered sugar, to garnish

Preparation

1.

Place your shaker tin onto your station and add strawberries, raspberries, blackberry, mint leaves and lemon peel, and muddle.

Add the lemon tea, hibiscus tea, lemon juice and simple syrup.

Give your cocktail a short, hard shake.

4.

Strain into a highball glass filled with ice.

5.

Top off your cocktail with ginger beer.

Garnish with a mint sprig and sprinkling of powdered sugar.
