- 1 10-ounce bag coleslaw mix or thinly sliced cabbage
- 1 clove garlic, crushed
- 1/4 cup Greek yogurt
- 1/4 cup mayonnaise
- 1/4 cup fresh parsley
- Salt and freshly ground black pepper, to taste
- 16 ounces shredded pulled pork (recipe linked above)
- 1 head Boston lettuce, leaves separated
This recipe is awesome because it's fresh, crunchy and full of flavor! It takes just a few minutes to assemble and the whole family will love it. The rich pork (which is so easy to make!) and crisp lettuce leaves are a perfect combo.
Technique tip: Make sure not to overstuff your wraps. It can be tempting, but less is more here!
In a large bowl, combine coleslaw mix, garlic, yogurt, mayonnaise, parsley, salt and pepper. Stir until well combined.
Place 1 or 2 tablespoons of the shredded pork on top of the lettuce cups. Top with a spoonful of coleslaw. Fold up like a taco and enjoy right away!
