Peanut Butter and Chocolate Frozen Banana Bites

There is nothing better than a frozen treat after school — especially if it's a healthy one! Sure, these little bites are halfway dipped in chocolate, but they're also packed with protein and vitamins. I would also like to know: Is there a better combination than peanut butter and bananas? Perhaps peanut butter and chocolate? Combine all three and you have a winning after-school snack!

Technique tip: Adding a little oil to your chocolate helps make it smooth and shiny, and also helps the chocolate harden.

Swap option: You can use vegetable oil in place of coconut oil to melt the chocolate.

Ingredients

  • 5 ripe bananas
  • 1/2 cup creamy peanut butter
  • 1 cup semisweet chocolate chips
  • 1 teaspoon coconut oil
  • chopped peanuts, sprinkles or crushed graham crackers, for topping (optional)

Preparation

Peel bananas and slice into rounds, about 1/4-inch thick.

Line a baking sheet with parchment paper. Spread approximately 1/2 teaspoon of peanut butter on one banana slice and top with a second slice, creating a sandwich, and place on baking sheet. Freeze for 1 hour.

Once bananas are ready, place chocolate chips and coconut oil in a microwave-safe bowl. Microwave for 30-second intervals, stirring in between, until chocolate has melted.

Dip each bite halfway into the chocolate and place back on baking sheet. At this point, you may sprinkle with any optional toppings. Freeze for 10 to 15 minutes, until chocolate hardens.

Enjoy right away or store in freezer for 1 to 2 months.
