This is a tribute to Dole’s island roots made with pineapple, bananas and lemons.
Technique tip: Pipe the banana mixture into bowls using a piping bag fitted with a star tip for the classic Dole Whip look.
Ingredients
- 3 ripe bananas, peeled, cut crosswise into thirds and frozen
- 1/2 lemon, juiced (about 2 tablespoons juice)
- 2 cups chopped pineapple, frozen
- 1 cup unsweetened coconut milk, chilled
- 2 tablespoons powdered sugar
- 2 teaspoons rum extract
- 1 teaspoon blue spirulina powder
- 1/4 cup toasted coconut chips
Preparation
Purée bananas, lemon juice, pineapple, milk, sugar, rum extract and spirulina in a blender on high until smooth. Makes about 4 cups.
Divide banana mixture into 4 small bowls; sprinkle with coconut chips.
