Grilled Macaroni and Cheese Sandwich

What's better than classic grilled cheese? A sandwich filled with gooey mac and cheese.

This hack combines two of the greatest comfort foods of all time-grilled cheese sandwiches and macaroni and cheese. And it's a great way to use that little bit of leftover macaroni and cheese.

Ingredients

  • 2 slices sandwich bread
  • Softened butter, for spreading
  • Dijon mustard, for spreading
  • 1 slice American cheese
  • 1/4 cup leftover stove top macaroni and cheese, warmed

Preparation

Spread one side of each bread slice with butter and put butter side down on a work surface. Brush the tops of the bread slices lightly with mustard. Put the American cheese on one slice of the bread and then spread the macaroni and cheese on top. Close the sandwich.

Preheat a large nonstick skillet on moderate heat. Place the sandwich in the skillet and cook over moderate heat until golden on the bottom, 3 minutes. Press with a spatula to flatten slightly, then flip the sandwich, cover and cook until browned on the bottom, 3 minutes longer; lower the heat if the bread is browned before the cheese melts completely. Transfer to a plate and serve.
