The night before: in a large bowl, whisk together eggs, milk, cheddar cheese, salt and pepper. Add meatloaf and gently stir together. Spray a muffin tin (again, I love the disposable kind!) with cooking spray, and divide the egg mixture evenly among the 12 cups. Cover and refrigerate overnight.
In the morning: preheat the oven to 350 degrees F. Once ready, place muffin tin in oven and bake for 15-20 minutes, or until tops begin to golden.
