These five pasta recipes are hearty enough for the hungriest appetite, quick enough for hectic weeknights, and they're vegetarian to boot, so you can add them to your Meatless Monday meal plan — or your meatless Wednesday or Thursday too, for that matter!

Feel free to substitute another pasta that's already in your pantry for any the suggested shapes in each recipe, and to top any of these dishes with a sprinkling of Parmesan if you're so inclined. The pastas are so flavorful they don't need any extra adornment, but we know that sometimes you can't resist.
