Barbecue expert chef Tim Love shares a crowd-pleasing recipe that'll amp up any cookout.
Ingredients
- 1 gallon warm water
- ½ cup salt
- 4 cloves garlic, smashed
- 4 bone in chicken thighs
- 2 cups mayonnaise
- 3 tablespoon poultry rub (recipe follows)
- Kosher salt
- Cracked black pepper
Dry rub
- 1/4 cup smoked paprika
- 1/4 cup granulated garlic
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon chili flakes
- 1/4 cup kosher salt
Preparation
Heat grill on high.
Mix water, salt, and garlic. Add chicken thighs, place in the refrigerator and soak for at least 1 hour and up to 16 hours.
Mix rub ingredients.
Mix mayo, 3 tablespoons rub, ½ cup orange juice. Add chicken thighs and marinate for 30 minutes
Remove from marinade and season with salt and pepper
Place chicken on grill skin side down first
Cook for approximately 7 minutes a side with the lid closed or until a thermometer reads 165 degrees.
