Preheat the oven to 450°F with the oven rack in the upper third of the oven.2.
Cut the potatoes into 1/2-inch-thick rounds. Spread in a single layer on 2 rimmed baking sheets. Drizzle with the oil to coat. Sprinkle with the salt, chili powder, paprika, black pepper, cayenne pepper, and garlic powder.3.
Bake until tender and slightly charred, 25-30 minutes. Transfer the potatoes to a serving platter, and garnish with extra paprika and flaky sea salt.
