Chef notes

This brunch favorite is sweet, savory and a little spicy. The brown sugar and cayenne add multidimensional flavor and help cut the richness of the salty bacon.

Ingredients

  • 12 thick-cut slices bacon, cut in half
  • 1/2 cup brown sugar
  • 1/4 teaspoon cayenne pepper

Preparation

Preheat oven to 350 F.

Line a rimmed baking sheet with foil, then place a wire rack on top. Arrange the bacon in a single layer on the rack. Evenly sprinkle the bacon with 1/4 cup sugar and 1/4 teaspoon cayenne.

Bake it for 15 minutes; then flip the bacon slices and sprinkle it evenly with remaining 1/4 cup sugar and 1/4 teaspoon cayenne.

Continue baking the bacon until it is crisp and browned, about 15 minutes more.
