On a gluten-free diet and craving something sweet? These are the treats you've been waiting for! Fruity banana, creamy peanut butter and rich dark chocolate will satisfy your sweet tooth without any flour.

Ingredients

  • 1 ripe banana, mashed
  • 1 egg, lightly beaten
  • 1 vanilla bean (or 1 tablespoon vanilla extra)
  • 1/2 cup coconut sugar (or brown sugar), tightly packed
  • 1 pinch sea salt
  • 1 cup natural peanut butter with oil (with or without crushed nuts)
  • 1/2 cup dark chocolate chunks or chips

Preparation

Preheat oven to 350 F.

Mash up a banana in a bowl using a fork. Then add the rest of the ingredients and stir well, careful not to over-mix. The batter should be thick and sticky. If it is thick but runny, place it in the fridge for 20-30 minutes, until stiff.

Use a small ice cream scoop to evenly divide the batter. Place the cookie dough on a baking sheet lined with parchment paper, then bake for 10-12 minutes, or until the edges are golden-brown, not crispy.

After baking, let the cookies slightly cool down on a cooling rack, but enjoy these warm.
