Baker Allison Carlock of The Crumbling Cookie in Fort Irwin, California adds brown sugar to her amazing butterscotch cookies for an extra layer of flavor.

Ingredients

  • 3/4 cup butter, softened
  • 1 1/4 cup dark brown sugar, plus more for garnish
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoons cinnamon
  • 1 1/2 cups butterscotch chips

Preparation

Preheat oven to 350 degrees F.

Cream together butter and sugar in a mixing bowl. Add egg and vanilla extract and mix until combined.

In a separate bowl, stir together flour, baking soda, cornstarch, salt and cinnamon. Then add dry ingredients to wet ingredients. Mix in butterscotch chips.

Scoop the dough into balls using a large cookie scoop and roll in dark brown sugar.

Bake for 16 minutes.
