The original Swiss shop with a team of just 10 has boomed into an international business with 15,000 employees today, and Dreyer had the chance to speak with several of them — including director of production, Kurt Stucki, who started at Lindt's global headquarters in Zurich, Switzerland, nearly 18 years ago.
Today, Stucki oversees the manufacturing facility that can produce up to 18 million truffles each day. First, cocoa beans arrive at the factory to be extracted from their shells, roasted at over 200 degrees Fahrenheit and crushed into cocoa "nibs." These nibs then move into the refining process, where they're mixed in tanks for up to 15 hours to give the truffles that creamy, velvety texture — a signature method otherwise known as conching.
Chocolatier Rodolphe Lindt actually invented this conching method by accident nearly 150 years ago, says Stucki. Lindt left the chocolate mixing over the weekend and came back to discover that super smooth, melted consistency that the truffles are still known for today.
Finally, it's on to the molding line, where both sides of the chocolate shell are fused together and filled with that melt-in-your-mouth filling. From there, every truffle is wrapped inside Lindt's iconic crinkly foil and bundled up before they hit the road.
