Roker sat down with Andrea Illy, chairman and third-generation owner of his family’s namesake brand, to understand why he believes that making coffee is as much a science as it is an art. Illy, whose grandfather invented a machine called the Illetta that’s considered the blueprint for modern espresso makers, tells Roker that the rise of higher-end coffee machines in homes represents a shift in how people are thinking about coffee: Instead of just focusing on that caffeine kick, they’re taking the time to actually savor the taste.
So, how does Illy ensure its Classico blend produces a flavor that’s up to par? Creating that experience starts long before the first sip, with raw beans being sourced from farms across 20 countries worldwide. These beans are then shipped overseas to the factory where they’re sorted and evaluated in a process called “selection.” David Brussa, Illy’s chief total quality and sustainability officer, explains that each batch is checked for any imperfections by a machine — and then again by hand — before they’re blended together and roasted at nearly 500 degrees F. The beans are cooled, ground and, finally, packed into pressurized metal canisters that help preserve their flavor and aroma for up to two years.
