Chef notes

When thinking about the sausage pinwheels, I am reminded of my favorite three words in the English dictionary: "this freezes beautifully."

Technique tip: These pinwheels may be made well in advance and frozen, which is always a blessing when you are serving breakfast or brunch.

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 1/2 pound uncooked ground mild sausage
  • 1/2 cup green onions, chopped
  • 1/2 cup white cheddar cheese, grated
  • 1 egg, beaten with 1 tablespoon water

Preparation

1.

Spread the sausage over the puff pastry sheet leaving a one-inch border on all sides. Sprinkle the green onions and cheddar cheese on the top of the sausage. Roll the pastry like a jelly roll, starting with the widest side of the rectangle. Wrap in plastic wrap and chill for four hours (at this point, it can be frozen, but thaw completely before proceeding with the recipe).

2.

Preheat the oven to 350 F.

3.

Slice the roll into half-inch slices and place on a greased baking sheet.

4.

Brush with egg wash and bake until golden and sausage is cooked through, about 25 to 30 minutes.
