Pickled Cucumber Salad

Every cookout needs a little crunch! This salad is the perfect side to serve at any barbecue or tailgate. It is bright, bracing, refreshing and helps cut through the richness of heavier dishes.

Ingredients

  • 1/2 cup apple cider vinegar
  • 1/4 cup water
  • 1/2 cup granulated sugar
  • 1/2 tablespoons chopped fresh dill
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 large English cucumbers, thinly sliced
  • 1 medium red onion, thinly sliced

Preparation

In a large bowl, whisk together apple cider vinegar, water, sugar, dill, salt and pepper. Mix until sugar has dissolved.

Add the cucumber and red onion to bowl, then use a spatula to toss and mix until veggies are coated in dressing.

3.

Cover bowl and chill in the refrigerator for one hour before serving.
