Ingredients

  • 6 cups (four 12-ounce bags) frozen sweet corn
  • 2 teaspoons steak seasoning
  • 1 stick (8 tablespoons) unsalted butter
  • 4 ounces cream cheese
  • 18-20 ounces pimento cheese spread
  • 1 jar pimentos, drained

Chef notes

Every good barbecue joint in Kansas City has signature side dishes. Cheesy corn is one of the most popular, but not always easy to make. This version is a simple combination of rich and creamy ingredients melted into seasoned sweet corn. For even more flavor, I've added pimento cheese. It's a side dish for game day that your guests will love!

Technique tip: You can prepare this dish in a slow cooker or in the smoker. Pick a high-quality pimento cheese spread made with real cheese shreds.

Swap option: You can add diced ham to make it a protein-packed side dish. If you don't have steak seasoning, sub in equal parts of kosher salt, freshly ground black pepper and garlic powder.

Preparation

Preheat the slow cooker to medium-high or a smoker to 275 F.

In the slow cooker pot or a foil pan, combine the frozen corn and steak seasoning. Add butter, cream cheese, pimento spread and pimentos and stir to combine.

If using a slow cooker, cover the pot with a lid. If placing the pan in a smoker, leave uncovered. Cook for 60 minutes, then stir and place the lid back on the slow cooker and the smoker pan. Cook for an additional 60 minutes. Keep warm until it's time to serve.
