"This is something my mom used to do a lot," says Lindsay. "Little mini English muffin pizzas. And they're so good, and our kids love to make stuff like this."

This kid-friendly lunch can be ready in just 15 minutes, plus children enjoy being able to help out in the kitchen. Not only will this recipe keep little hands busy, but then kids will have a delicious meal to enjoy later. 

Ingredients

  • 4 English muffins, split in half
  • Marinara sauce
  • Shredded mozzarella cheese
  • Pepperoni (optional)

Preparation

Preheat the oven to 400°F.

Place the English muffin halves cut-side up on a sheet pan. Spoon a generous amount of marinara sauce over the muffins and spread it around evenly.

Cover the marinara with a handful of mozzarella. Then, if desired, top with a few pepperoni slices.

Pop the sheet pan in the oven for 10 minutes, or until the cheese is melted and golden brown. Let them cool off for a couple minutes, then enjoy!
