Swap the pigskin for potato skins with this new take on everyone's favorite football snack. Simply roast sweet potatoes, scoop out the centers and then pile them high with chopped bacon, shredded cheddar cheese, sour cream and scallions. (Bonus: The scooped sweet potato can be reserved for gnocchi, mashed potatoes or even DIY baby food!)
