Ingredients
- 1 rotisserie chicken
- 1/4 cup low-fat plain yogurt
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon coarse salt
- 1/4 teaspoon ground pepper
- 1 teaspoon apple cored and cut into 1/2 inch pieces (about 2 cups)
- 1 stalk celery, thinly sliced crosswise (about 1/2 cup)
- 1/2 cup halved red seedless grapes
- 1/2 cup chopped toasted walnuts
- 2 cup boston lettuce leaves
Preparation
Baking Directions:
In a medium bowl, whisk together 1/4 cup yogurt and 1 tablespoon fresh lemon juice; season with 1/2 teaspoon coarse salt and 1/4 teaspoon ground pepper.
Add 1 apple, cored and cut into 1/2 inch pieces (about 2 cups), 1 stalk celery, thinly sliced crosswise (about 1/2 cup), 1/2 cup halved red seedless grapes, and 1/2 cup chopped toasted walnuts; toss to coat with dressing.
Cover; refrigerate until ready to serve, up to overnight.
Divide salad in half; serve each portion on 2 Boston lettuce leaves.
Tips:
Nice hearty salad — great to use rotisserie chicken as a shortcut.
