Tartare sauce

Ingredients

  • 1 tablespoon diced red onion
  • 1 clove garlic, finely chopped or grated on a microplane
  • 1 tablespoon caper, briefly rinsed in cold water
  • 1 tablespoon diced cornichon
  • 1 tablespoon diced cooked egg – white and yolk
  • 1 tablespoon lemon juice
  • 2 cup ready-made best-quality mayonnaise

Preparation

Baking Directions:

Mix together the onion, garlic, capers, cornichon and egg.

Stir in the mayonnaise and combine thoroughly.

3.

Warm the lemon juice briefly and add salt and cayenne pepper to taste (this technique allows the salt and cayenne to be dissolved before being added to the oily mayo).

4.

Mix lemon juice mixture into the mayonnaise.

Store in refrigerator.

5.

Check for taste and spice up with Tabasco and/or any spicy concoction such as Bermuda sauce.
