Ingredients

  • 2 onions minced
  • 8 stalk celery minced
  • 2 stalk fennel bulbs minced
  • 1 cup olive oil
  • 2 cup crushed tomatoes
  • 1 cup zest from one lemon
  • 2 clove garlic minced
  • 2 clove crushed red pepper
  • 1 cup dry white wine
  • 1 cup water
  • 1 pound squid
  • 12 pound clams
  • 1 pound shrimp peeled
  • 1 pound scallops
  • 4 pound 1 1/2 lb. lobsters cooked tails split
  • 2 pound monkfish

Preparation

Baking Directions:

Cook the minced vegetables in olive oil over med to low heat for about 45 minutes.

Add the tomato, garlic and lemon zest.

Add the squid and cook for about 30 minutes add the wine, water and clams cook until the clams open.

The dish can be cooked up to this point and can be held for 2 days.

Bring the base to a simmerAdd the remaining seafood and gentle cook for 15-20 minutesServe with linguini mixed with garlic, parsley and olive oil.
