Ingredients

  • 1/4 cup extra-virgin olive oil
  • 1 cup panko
  • 1/4 cup grated pecorino
  • 1/3 cup fresh thyme leaves chopped
  • 2 cup garlic cloves
  • 1 1/2 pound large shrimp, peeled and deveined
  • 2 pound large lemons cut into wedges

Preparation

Baking Directions:

Preheat oven to 450 degrees and slick a large baking sheet with oil.

Combine panko, pecorino, thyme, garlic and pepper (to taste) in bowl.

Stir in extra-virgin olive oil to moisten.

Arrange shrimp on baking sheet in single layer and spoon a little bread crumb mixture onto shrimp.

Bake until crumbs are golden brown and shrimp are cooked through (about 10 minutes).

Transfer to platter and garnish with lemon.

Serve with a side of broccoli sautéed in chopped garlic and butter.
