Ingredients

  • 1/2 english cucumber or 2 small kirby cucumbers, sliced
  • 2 tablespoon mirin (japanese sweet rice cooking wine)
  • 2 tablespoon clear rice vinegar
  • 1/2 teaspoon sea salt

Preparation

Baking Directions:

Put the cucumber slices in a non-reactive bowl.

Sprinkle the mirin, rice vinegar, salt, and sugar over them and toss to combine.

Let stand at least 10 minutes at room temperature before serving, or refrigerate for up to 3 days.
