Pork tenderloin with mustard BBQ glaze on skewers

Ingredients

For the pork:
  • 1 whole, cleaned pork tenderloin
  • 1 gallon lon water
  • 1/2 cup salt
  • 1 tablespoon chili flakes
  • 2 tablespoon tim love pork rub
  • 8 tablespoon skewers
For the mustard BBQ glaze:
  • 1 whole, cleaned pork tenderloin
  • 1 gallon lon water
  • 1/2 cup salt
  • 1 tablespoon chili flakes
  • 2 tablespoon tim love pork rub
  • 8 tablespoon skewers
  • 1 cup dijon mustard
  • 1/2 cup yellow mustard
  • 1/2 cup apple cider vinegar
  • 1/2 cup brown sugar
  • 2 tablespoon worcestershire
  • 1 teaspoon cayenne

Preparation

Baking Directions:

Mix all ingredients for the mustard BBQ glaze together well.

Preheat grill to 450 degrees.

Mix water, salt and chili flakes and add tenderloin.

Refrigerate for 1 hour.

Remove pork from brine and cut into 1 1/2 inch cubes.

Rub cubes with peanut oil and season well with rub.

Skewer pork.

Place on grill for 3 minutes per side.

Serve with mustard BBQ on side or glaze just after flipping.
