Ingredients
For the pork:
- 1 whole, cleaned pork tenderloin
- 1 gallon lon water
- 1/2 cup salt
- 1 tablespoon chili flakes
- 2 tablespoon tim love pork rub
- 8 tablespoon skewers
For the mustard BBQ glaze:
- 1 whole, cleaned pork tenderloin
- 1 gallon lon water
- 1/2 cup salt
- 1 tablespoon chili flakes
- 2 tablespoon tim love pork rub
- 8 tablespoon skewers
- 1 cup dijon mustard
- 1/2 cup yellow mustard
- 1/2 cup apple cider vinegar
- 1/2 cup brown sugar
- 2 tablespoon worcestershire
- 1 teaspoon cayenne
Preparation
Baking Directions:
Mix all ingredients for the mustard BBQ glaze together well.
Preheat grill to 450 degrees.
Mix water, salt and chili flakes and add tenderloin.
Refrigerate for 1 hour.
Remove pork from brine and cut into 1 1/2 inch cubes.
Rub cubes with peanut oil and season well with rub.
Skewer pork.
Place on grill for 3 minutes per side.
Serve with mustard BBQ on side or glaze just after flipping.
