Ingredients

  • 1/4 cup butter
  • 1 cup potato
  • 1 cup small onion
  • 1 cup yellow bell pepper
  • 1 cup red bell pepper
  • 12 cup mushroom caps
  • 1 cup heavy sweet cream
  • 1 cup Salt/pepper

Preparation

Baking Directions:

Heat butter in large saute pan, preferably with a non-stick surface.

Add potato and cook for 4 minutes over medium heat, stirring occasionally.

Add onion, yellow and red peppers, and mushroom caps and cook an additional 3 to 4 minutes, or until any liquid released by vegetables has evaporated and potatoes are cooked.

Add heavy sweet cream and bring to a boil.

Continue cooking until mixture becomes very thick.

Season to taste.

Reserve.
