Cavatelli with peas, bacon and pecorino

Ingredients

  • 1 cup diced bacon
  • 1 cup white onion diced
  • 1 cup blanched peas
  • 2 tablespoon minced mint
  • 1/2 cup water
  • 1 cup grated pecorino

Preparation

Baking Directions:

Cook bacon over low heat until it renders its fat and is crispy.

Remove bacon with a slotted spoon and add onions to bacon fat.

Add water and allow to reduce by three-fourths.

Once onions are browned add blanched peas and remove from heat.

Cook pasta and add to onions and peas.

  Add crispy bacon and mint and garnish with pecorino.
