Ingredients
- 10 ounce penne pasta
- 1 teaspoon salt
- 6 ounce smoked salmon
- 3/4 cup spinach
- 1/4 cup basil leaves
- 2 tablespoon capers
- 3 tablespoon olive oil
- 1 1/2 tablespoon lemon juice
Preparation
Baking Directions:
30minutesPlace a 4 quart saucepan filled 2/3 with water and 1 teaspoons salt over high heat.
Bring to a boil, then add the penne pasta.
Cook (approximately 12 minutes) until pasta has a little firmness but no raw flour taste.
Test by removing one piece; set aside to cool then taste.
Remove from heat, strain, run cold water over the pasta to stop the cooking and set aside to cool.
In a large mixing bowl add all the ingredients together, mix gently, and serve.
Preheat oven to 400°F.
Place salmon on a baking sheet rubbed with olive oil.
Cook for 25 to 30 minutes.
