Cold Brew Chia Pudding

Chia pudding is such an easy and delicious breakfast to prepare. And this cold brew-infused version is a coffee lover's dream! It is a great way to fuel your morning and keep you full. The chia and hemp seeds are a great source of protein and create such a nutritional powerhouse of a breakfast.

Technique tip: Don't have a blender? Just whisk the pudding ingredients in a bowl following the same directions.

Swap option: You can use any milk you want, but I love the creaminess that coconut milk adds to the pudding. You can use any fruit you want, like fresh berries, instead of banana.

Ingredients

  • 2/3 cup chia seeds
  • 2/3 cup hemp seeds
  • 1 cup full-fat coconut milk
  • 2 cups cold brew
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 2 medium bananas, sliced
  • 1 cup yogurt of choice, I like using coconut yogurt or vanilla Greek yogurt
  • 3 Belvita Soft Baked Banana Bread Breakfast Biscuits

Preparation

1.

Add the chia seeds, hemp seeds, coconut milk, cold brew, vanilla extract and cinnamon to a blender, and blend until smooth and creamy.

Transfer mixture to a covered bowl, jar or air-tight plastic container and add to the fridge to set overnight.

3.

To assemble the parfaits, divide the banana slices between four Mason jars or bowls.

4.

Spoon equal amounts of chia pudding into the jar, then the yogurt, then crumble the Belvita Soft Baked Banana Bread Breakfast Biscuits on top.

5.

Serve immediately or refrigerate, covered, for up to three days.
