Ingredients

  • 2 cups arugula
  • 1/3 cup red onion, thinly sliced
  • 3/4 cup watermelon, cut into small chunks
  • 1/3 cup feta cheese or goat cheese, crumbled
  • tablespoons olive oil
  • Fresh lemon juice, to taste

    Peppery arugula is a perfect foil to creamy feta cheese and sweet, juicy watermelon in this dish. Serve it as a side or a main course. Don't be surprised if this becomes your new go-to summer salad!
