Ingredients

    • 8 ounces cooked, mixed beans (black, red and white beans)
    • 3 Roma tomatoes, diced into small pieces
    • ½ cup of red onions, diced into small pieces
    • ½ cup of your favorite vinaigrette (I prefer citrus)
    • 2 tablespoons cilantro, roughly chopped
    • Salt and pepper to taste

Preparation

  1. Mix all ingredients
  2. Let salad marinate for 1 hour
