Ingredients

  • 1 1/2 cup all-purpose flour
  • 1/2 cup whole-wheat flour
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup pumpkin puree
  • 2 cup large eggs, at room temperature
  • 1/4 cup sugar
  • 1/2 cup firmly packed light brown sugar
  • 1/4 cup vegetable oil
  • 1/4 cup applesauce
  • 1 cup raisins (golden or dark)

Preparation

Baking Directions:

Preheat oven to 350 degrees.

Grease and flour a 9 x 3 x 5-inch loaf pan.

In a large bowl, combine the flours, baking powder, baking soda, spices, and salt.

In another bowl, on the medium speed of an electric mixer, beat the pumpkin puree with the eggs, sugars, oil, and apple-sauce until well combined.

Next mix the dry ingredients into the pumpkin mixture until thoroughly combined.

Stir in the raisins.

Pour the batter into the prepared pan and bake for 50 to 55 minutes, or until a cake tester inserted into the center of the loaf comes out clean.

Let cool for 15 minutes, and serve slightly warm or at room temperature.
