Leftover meatloaf soft tacos

Ingredients

  • 1/2 cup sour cream
  • 3 tablespoon green salsa
  • 1 tablespoon olive oil
  • 3 slice leftover meatloaf, about 2 cups when crumbled
  • 1/3 cup water
  • 1/2 cup white onion, diced fine
  • 1/2 cup cilantro, chopped fine

Preparation

Baking Directions:

Mix sour cream and salsa, set aside.

Put oil and meatloaf in a nonstick pan, and break up over medium heat until well crumbled.

Add water and stir well — heat through.

Warm tortillas on a flat griddle or pan on both sides until just getting color, but not crispy.

Sread some salsa cream on a tortilla, add the beef, then top with onion and cilantro.
