Duck a l'orange sauce

Ingredients

  • 2 tablespoon sugar
  • 1 tablespoon water
  • 1 tablespoon wine vinegar
  • 2 cup low sodium chicken broth
  • 7 ounce ready-made duck demi-glace.

Preparation

Baking Directions:

1.

In a saucepan cook the sugar and water to a brown caramel color.

2.

Immediately stop the cooking process by placing the saucepan bottom in cold water.

3.

Add the orange juice, the zest and vinegar.

Cook to reduce by half.

4.

Add the chicken broth and the duck demi-glace.

5.

Cook to reduce by 2/3 or until syrupy.

  6. Just before serving, carefully adjust for seasoning with a pinch or two of salt.
