Chicken-basil rice noodle stir-fry

Ingredients

  • 8 ounce transparent rice noodles
  • 1 pound ground chicken
  • 1 pound onion
  • 1/2 tablespoon ginger
  • 1 tablespoon sambal oelek
  • 1 tablespoon red bell pepper
  • 1/4 cup basil leaves
  • 1/4 cup limes
  • 1/4 cup kosher salt and black pepper
  • 1/4 cup canola oil

Preparation

Baking Directions:

Fill a large bowl with hot water.

Add the noodles and soak until tender, about 20 minutes.

Drain and set aside.

Heat a wok or large, heavy sauté pan over high heat.

Add oil and swirl to coat the pan.

Add chicken, season and stir-fry, breaking up the meat, until cooked through, about 5 minutes, and set aside.

  4. In the same pan, coat with oil and add onion, ginger and sambal and stir-fry until softened and fragrant, about 1-2 minutes.

Add the noodles, bell pepper and add back chicken, heat through, stirring.

Add the basil and lime juice and toss well.

Check for seasoning.

Garnish with the lime wedges and basil sprigs and serve immediately.
