Red bean soup

Ingredients

  • 2 cup red adzuki beans, soaked overnight
  • 1/2 cup lotus seeds, soaked overnight
  • 1/4 cup sugar
  • 2 cup dried mandarin peels

Preparation

Baking Directions:

In a large pot, add the beans, lotus seeds, sugar, and mandarin peels.

Cover with 2 quarts water and bring to a boil over high heat.

Reduce heat to medium-low, gently boil until the beans break down, about 4 to 6 hours.

Serve hot.
