PASTA AL FORNO WITH TOMATOES AND BASIL

Ingredients

  • 3 pound tomatoes
  • 1/2 cup butter
  • 2 cup parmesan cheese
  • 1 pound pasta
  • 1 cup basil
  • 2 tablespoon garlic
  • 2 cup breadcrumbs
  • 1 cup olive oil
  • 1 cup salt and pepper

Preparation

Baking Directions:

Heat the olive oil and blanch the tomatoes for 1 minute then cool tomatoes in ice water.

Peel tomatoes, cut in half, remove seeds and dice tomatoes.

Heat extra virgin olive oil in a pan and sauté garlic till golden brown.

Add the tomatoes and simmer with basil, salt and pepper to taste.

Boil pasta al dente.

In a sauté pan, add some butter, pasta, Parmesan cheese and mix together.

Add salt and pepper.

In a buttered gratin dish, add pasta to the bottom layer, then layer with tomatoes, and top with toasted breadcrumbs and sprinkle with pats of butter.

Bake in a 350 oven for 15 minutes until the crust is dark and golden.

To Prepare BreadcrumbsToast breadcrumbs in 250 oven.

Breadcrumbs are ready when you see a golden brown color.

Sauté in extra virgin olive oil, garlic and basil until golden brown.

Add salt and pepper, let rest at room temperature then mix with breadcrumbs.
