I love this salad because it takes a simple garden salad and perfects it. It's made up of such simple, familiar ingredients, but preparing them with extra care creates a better eating experience visually and texturally. I usually use the Kuro dressing for this salad at Kuro at Hard Rock Hotel & Casino Atlantic City, but you can also use the yuzu dressing for a gluten-free option.
Technique tip: Shock the vegetables in an ice bath to clean and crisp themy. This also helps thinly shaved vegetables curl, adding depth to your salad.
Swap options: Feel free to use your preferred lettuce; romaine, arugula, spinach or a mesclun mix all work beautifully. You can also incorporate a variety of root vegetables, such as different types of carrots and radishes, to add color and vibrancy to your salad. And if you'd like to make it a heartier meal, adding a protein is always a great idea. I recommend chilled chicken or poached shrimp.
