Jerk shrimp with mixed fruit

Yields four servings


  • 2 pound medium size shrimp, or about 36
  • 1 pound bottle liquid jerk sauce for marinating


Baking Directions:

Rinse the shrimp and pat dry with paper towels.

Place the shrimp in a shallow dish or plastic container and pour the marinade over them.

Cover and marinate four to six hours in the refrigerator, turning occasionally.

Preheat a grill or broiler.

Remove the shrimp from the marinade and grill or broil for two minutes on each side until pink and just cooked.

Set aside to cool.

Toss the fruit cubes together, place fruit in and around hulled out pineapple halves.

Garnish the edge of the platter with cooked shrimp.
