Chef notes
The Torah calls Israel "the land of milk and honey," and that theme ran through many of the stories that I heard growing up. But so many of my relatives have memories of honey from Ethiopia as well: Many of our families had beehives on their properties. The sweet scent of honey wafts through all the memories that my distant cousin, Vered Germay, has from her childhood in Ethiopia. She remembers her childhood on the family farm, playing with her brown-and-white dog, Koorchit, amid the dozens of beehives on their property. Most of all, she remembers sneaking into her family's storage room, dipping her finger into a pot of honey, and savoring the sweetness. This cake is my tribute to all things honey, all around the world: I love it for breakfast and dessert. I've given it Ethiopian flair with a bit of coffee extract.
