Already hit the road this summer? Many of these trips are available until Labor Day and beyond. On your mark, get set and go.

Plate & Pitchfork (Portland, Ore.)
Travelers can paddle Snake River's scenic territory in Hell's Canyon and rope a calf at Carman Ranch on Plate & Pitchfork's five-day Ranch and Raft culinary adventure. The trip includes three meals a day prepared by Portland, Ore. chefs Jason Barwikowski of The Woodsman Tavern and Benjamin Bettinger of the new restaurant Imperial.

Forty 1° North (Newport, R.I.)
The waterfront property Forty 1 North has a two-night Take A Bite Out Of Fall package which includes accommodations in LEED-certified rooms, a private vineyard tour and a gourmet picnic for two at the nearby Sakonnet Vineyards & Winery, a one-hour cooking class with Executive Chef Peter Eco and a five-course wine pairing dinner at The Grill.

The Take A Bite Out Of Fall package also includes a welcome Hibiscus champagne cocktail; a complimentary bottle of Winterwine (Icewine) 2010 from Sakonnet Vineyard, and the 41 North Breakfast, which can be enjoyed at The Grill or as room service.

In addition, hotel guests, visitors and locals can book a 60-minute mixologist course with Scott Fitzgerald for $50 per person, to learn Fitzgeralds tricks of the trade for made-to-order concoctions on Oct. 13, Oct. 14, Nov. 30 and Dec. 1.

The Beacon Hotel (Miami Beach, Fla.)
The Beacon Hotel wants travelers to extend their vacations with the aptly-titled Stay Longer package. Guests who stay two or more nights get discounted rated.

Price: Rates vary by date; minimum two-night stay; available until November 2012.

Time Warner Center (New York City)
The Big Apples Time Warner Center has several last minute summer packages including the Bouchon Picnic and Ride in the Park package which includes a picnic lunch for two from Bouchon Bakery including sandwich choice, bottle of water and chocolate Bouchons, four-hour Bike and Roll NYC bike rental for two and two VIP shopping passes to The Shops at Columbus Circle.

The Perfect Day at Time Warner Center package includes one 50-minute Swedish massage at The Spa at Equinox, a pre-fixe lunch at A Voce for one and one VIP shopping pass to The Shops at Columbus Circle.

The Perfect Evening at Time Warner Center pre-theater package includes a 5 p.m. pre-theater pre-fixe dinner for two at Porter House New York, two tickets to a live jazz performance at Dizzys Club Coca Cola at 7 p.m. and two VIP shopping passes to The Shops at Columbus Circle.

The Food, Fashion & Fun package includes two tickets to the Museum of Arts and Design, pre-fixe lunch for two at the Michelin-starred A Voce Columbus, two cocktails at Porter House New York and gift bag filled with shopping incentives from The Shops at Columbus Circle.

Inn on the Alameda (Santa Fe, N.M.)
On the heels of the Rand McNalley/USAToday Best of the Road contest, where Santa Fe, New Mexico was voted the city in America Best for Food, the Inn on the Alameda offers travelers the chance to sample Santa Fe's cuisine with the Fresh Santa Fe package.

The package includes a three-night stay, $20 per person in Farmers Market tokens, a $40 gift certificate for two for lunch at Il Piatto, a downtown trattoria, two Santa Fe Farmers Market caps, two Inn on the Alameda tote bags, daily continental breakfast and an afternoon wine hour each day.
